Too much Oatmeal?
I always over estimate the amount of oatmeal my children will eat in the morning ...
If that sounds like you - try these things with your left overs:
Add to your meatloaf recipe instead of bread crumbs.
Make Oatmeal Sourdough Bread or Leftover Oatmeal Pancakes
Add to muffin mix, cookie or almost any batter.
Pantry Corn Bread
INGREDIENTS:
1 (9-ounce) package yellow cake mix
1 cup yellow cornmeal
1 cup flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/4 cup (1/2 stick) butter, melted
1 egg, beaten
TO PREPARE:
Prepare the cake batter using package directions, being careful to beat air into the mixture. Combine the cornmeal, flour, baking powder and salt in a separate bowl and mix well. Stir in the milk, butter and egg. Fold the cornmeal mixture into the cake batter.
Spoon the batter into 2 greased 8-inch round baking pans or a 9x13-inch baking pan. Bake at 400 degrees for 20 to 25 minutes or until a wooden pick inserted in the center comes out clean and the top is light brown.

I either make too much or not enough oatmeal - where's the happy medium?
Ha. If I knew where the happy medium was - I wouldn't have been able to post this. I am terrible when it comes to measuring the *right* amount of anything ... rice, potatoes, oatmeal, pasta .. I am forever trying to figure out how to *use* the extras .. usually it heads to the compost ... dang did I just say that out loud? There goes my reputation.
Oh TOO funny! I made oatmeal yesterday for myself and... stared at the half eaten bowl going "why do I always DO this? I KNOW I can NOT eat it all!" LOL
BTW! I just HAVe to post this so you see it here because I missed it earlier (how???) I was devistated by the RW and RP split. Who knows though, they are only seperated, maybe they will work it out. It is obvious that he is very in love with her- I saw a recent pic of them and he watches her like a very hungry man. LOL Anyway, I am so glad I am not alone and have you and all your readers to feel silly with over them. They are such a "nice" couple, I can't help but pray they work out thier issues. Sometimes you just need a little space to see everything a bit clearer to fix a problem.
I love the meatloaf idea. YUM.
I still use the little flavored (sugared) oatmeal packets. I tell myself it is better than not eating oatmeal at all, but I really need to learn to cook for big girls!
**Any suggestions or posts to come on favorite desserts for Thanksgiving?? I am starting to plan already and that is my contribution!! I will keep my eyes peeled!!
I had a recipe somewhere for Baked Oatmeal. It is made ahead in a cake pan, and the leftovers are just kept in the refridgerator to be warmed in the microwave the next morning for breakfast. Let me go look for it....

Here it is!!
Baked Oatmeal
3 cups quick oats
1 cup packed brown sugar
2 tsp baking powder
1 tsp cinnamon
1 tsp salt
1 cup milk
1/2 cup melted butter
2 beaten eggs
mix all ingredients together and pour into an 8X8 cake pan (glass preferably). Bake at 350° for 40-45 minutes. And there you go, no more leftover oatmeal!! You could add apples or raisins to it too!
T - I do it every single time. Oatmeal and Pasta!
RR & RP .. my heart still breaks. Seriously if Kelly Ripa and Mark C .. split, I will give up on true love.
Mac .. Try Irish Oatmeal. You have to make it when you aren't in a rush. It comes in a lovely tin - usually on the top shelf of the oatmeal section. It is sooo good. But is takes time - like all good think {wink} {wink} .
I am working on a Thanksgiving menu as we speak ...
